Mandarin Oriental Kuala Lumpur Four-Hands collaboration featuring Chef Johnson Wong from Gēn根

The Mandarin Oriental Kuala Lumpur’s Mandarin Grill is back with an exciting Four-Hands collaboration with Chef Johnson Wong from Gēn根, one of Malaysia’s finest restaurants in Penang.

Kickstarting its journey from 16 to 18 November, The Mandarin Grill is pulling out all the stops. Collaborating with the hotel’s new Chef de Cuisine, Rafael Martinez Millan, you can anticipate a menu filled with an elevation of flavours.

With Chef Johson by his side, these two masterminds have curated an exclusive lunch and dinner menu, taking inspiration from traditional Malaysian flavours for a memorable dining experience.

Thankfully for us, we had the opportunity to savour these dishes and trust us, it’s an experience you won’t want to miss.

Starting with the amuse bouche, the combination of sea prawn, oyster sauce, and tomato berries, all served on a bed of ginger flower, make for a refreshing and flavourful start to the journey.

Next up, the cannolo, made with fillo pastry, strawberry, and anchovies, was an exciting twist on the classic Italian dessert. Later, we were served with the skipjack tuna, served with sesame oil, leek, and brassica.

As for the starters, the Belcheri oyster is served with mountain yam, mussel broth, and fennel seed. It has a refreshing taste that prepares the palate for the rest of the meal. Later on, we enjoyed the beef paella, which comes with a red wine sauce, making it an ideal dish for those who want a more filling and satisfying meal.

Moving on, the coral grouper with buah kulim, lotus, and nasturtium was fresh, satiny and delectable with every bite. Those who prefer duck will enjoy the aged duck breast with chestnut cream, morels, and green papaya.

Before moving on to the final course of sweet treats, you can cleanse your palate with the pre-dessert of Josephine pineapple accompanied by soy sauce, chilli, and ice plant. This modern interpretation of a zesty and refreshing Malaysian rojak with a kick was a great choice. It will leave you feeling refreshed and ready for the next course.

As a perfect finish to our adventure, we were served desserts. Among them were the mango with sweet curry sauce and seeds. Finally, we were treated to the petit fours: guava and sea grape, nutmeg doughnut, chocolate Meliga cookie, and ginger marshmallow.
