“It’s the ultimate filler. I make this instead of mashed potato and serve it with my favourite chicken or fish dishes. It works a treat and tastes better than mashed potato. It’s super low in carbs, and calories, and gives you a good dose of fibre.

I often cook this dish on the weekends for my friends, I’ll sub-in the cauliflower mash instead of traditional mashed potato. It’s always a hit!”
INGREDIENTS:
1 x head of cauliflower, leaves trimmed and cut into pieces
Chicken stock
Salt and pepper to taste
METHOD:
Bring the chicken stock to the boil in a saucepan.
Pop the cauliflower in the stock and bring to the boil.
When cooked, take off the stove, drain the caulifflower and mash until smooth.
