Chef Sergio Meza, one half of Villanos en Bermudas in Bogotá, will be kicking things off for the 2019 edition of Guest Star Chef Series at The St. Regis Kuala Lumpur.
Ranked number 15 on Latin America’s 50 Best Restaurants, Villanos en Bermudas is a vision of contemporary Colombian cuisine, with a playful yet simplistic take, where pineapples are served as a savoury course and cauliflowers are made the highlight in the dessert.
For the exciting seven course degustation journey, chef Sergio Meza will be bringing simple ingredients to the fore, with a Latin twist, crafted for the discerned Malaysian diner. Expect quirky plates such as Shrimp with Vanilla, Macadamia and Pak Choy, inspired by a traditional dish cooked all along the Pacific coast of Colombia, as well as Lamb with Beans, Avocado and Mustard, that references the ancient sous vide cooking method of putting the meat in the ground to cook. “The mind is like a parachute – it only works if it’s open,” says Meza.
