In the three years since it’s opening, Lyle’s has progressed to be the It place in Shoreditch, occasionally acting as a playground for guest chefs to serve up their interpretation of modern British cuisine. Chef James Lowe’s no-nonsense approach to seasonal produce is admirable. Taking the most basic ingredients such as a tomato or an eel, he ages them in-house and turns them into stars in their own right. Natural wines also complement Lowe’s philosophy of going back to basics—the aromatics and raw flavours striking a good match to the beautiful, fuss-free food.
