Coffee was first discovered here in Ethiopia. Due to possessing such a long and rich history with the bean, the Ethiopian approach to creating coffee is certainly more natural compared to other regions. They value their tradition and this sector of the world cultivates wilder tasting coffees. Utilising the ‘dry’ method, coffee cherries are laid out under the sweltering hot sun. There is no room for error here as quality has to be immediately guaranteed from the get-go, unlike the washed method where defects in the beans are easily detectable. The ethical initiative by Nespresso preserves the tradition of coffee harvesting in Ethiopia by allowing a growth in how much is harvested. Their resources assist the farmers to establish high quality from the very beginning.
