At this point, it is evident that I’m one to favour the sweets. The humble coconut was given a facelift and interpreted into four different ways  ice cream, meringue, whipped foam and cocktail. To balance out the sweetness, the citrusy lemon-lime flavour profile of the kaffir lime was cleverly hidden within the dessert. Polish up your plate with the Coco Loco Cocktail  smooth, velvety and slightly crunchy from the coconut flakes, it doesn’t get more refreshing than this.
