A simplistic dining destination imbued with a touch of elegance
WHAT The contemporary, and Malaysian produce-driven menu curated at Atas – The RuMa Hotel’s flagship restaurant – is a guessing game on our country’s best produce, and a testament to Vancouver-born Chef Tyson Gee’s dedication.
WHY EAT HERE Tyson’s brand of food is sophisticated simplicity, reflective of the surrounding space, where scallops are swimming in fragrant tempoyak oil, served on shell for additional visual effect; beef tartare laced with wild highland Sarawak pepper with a pungent citronella flavour that slowly grows on you, spoon after spoon; and cured ocean trout dressed with a vibrant sambal dressing, pomelo bits and sago crackers to highlight a play of textures.
LOCAL TWIST For mains, classics were given an interesting local twist, from juicy wagyu steaks, illuminated with punchy sambal, to crunchy baby corns laced with coconut cream and topped with shavings of cheese.
A DESSERT DELIGHT The pandan crème caramel with coconut and lime ice cream were gone within seconds, and mouthfuls of the most indulgent durian ice cream were slowly savoured – smooth, creamy and with an aftertaste that lingers.
